I was supposed to write this last week when the sun was shining down on us from a perfect blue sky. My schedule got upended due to my mum and father-in-law taking it in turns to be rushed in to hospital, having falls, infections and the challenges of being very elderly and frail. So instead, I am writing my note for your summer newsletter as we are poised in the UK to expect a rip roaring lightening storm of biblical proportions.

My friend Georgie is still going camping today despite the threatening forecast and will laugh her way through it as the brilliant trooper she is.

I am fascinated by her attitude to life, when I recounted how my week was topped off when I pranged my car as I reversed into a 2 foot high bollard which will be a costly repair,  we ended up in hysterics as she told me her own car mishaps and somehow we got on to the time she got her toe jammed up a mans rear end when all hell broke loose in the rapids on a donut ride in the lazy river in Dubai.

I share this because there is one thing that is certain, the weather!  Life and events are unpredictable. We know all about unpredictable in The Chrysalis Effect family don't we?

When illness strikes the recovery journey can feel as bumpy as a stormy night when we long for calm. I was reminded today of how important it is to share our mishaps with those who have experienced their own and who can lift us up so that we can lift them when life sends one of its storms.

Today I am thankful for my lovely friend who lifts me up and makes me laugh. We all need a Georgie in our lives. Many of you will have met her, as she often helps us with our live events.

So as we prepare for our 10th Anniversary Celebrations on Oct 12th please send in your award nominations for those recoverers, practitioners and carers who help you weather the storm. Get voting for who lifts you up, makes you laugh and reassures you that the sun will shine again.

Sugar Free Rhubarb Crumble

From our wonderful Recovery Specialist and Recoverer Rosemary Channin

Ingredients

  • 1 cup coconut flour
  • 1 cup oats
  • 1/2 cup maple syrup
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/2 cup butter
  • 1 cup homemade apple juice
  • 1 1/2 tsp. tapioca
  • 4 cups fresh or frozen rhubarb (if frozen drain juice)
  • Ice cream/whipping cream or coconut whipping cream

 


Method:

  1. To begin, place apple juice and tapioca in a pot on med/high heat. You will want to cook this down until it starts to thicken. Stir constantly.
  2. While your apple juice mixture is cooking, mix dry crust ingredients. I do this first so that the spices are thoroughly mixed. Next add in room temperature butter and combine until mixture is crumbly looking. Next slowly add the maple syrup in. Pour a little, mix, and then add more. This ensures the syrup mixes in a little better.
  3. Once the apple juice has cooked down, place your rhubarb in a casserole dish like the one I have here, and then add your apple juice, mix thoroughly. Spread your crust on top of the rhubarb, place in a 325F oven for 20-30 minutes or until crust is a nice golden brown. Let cool and serve.
